The Recipe Club recipe (giving credit where credit is due!)
Cheesy Ham and Potato Bake
Ingredients:
1 can (14-1/2 oz) Del Monte Mexican Style Stewed Tomatoes
3 Tbs. butter, melted
3 Tbs. flour
1 cup milk
1 cup shredded cheddar cheese
1/2 cup sliced green onions
2 cans (16 oz. each) New Potatoes, drained and sliced
1 1/2 cups diced cooked ham
Directions:
Drain the tomatoes reserving 1/4 cup.
In a saucepan, cook the butter and flour for 4 minutes
over medium-low heat, stirring constantly.
Stir in the milk, cook, stirring constantly for 5 minutes or until
thick.
Stir in the tomatoes, the reserved juice, 3/4 cup of cheese and onions.
In a buttered 2 quart baking dish, arrange half of the potatoes.
Top with half of the ham and half of the sauce.
Repeat.
Top with the remaining cheese.
Bake at 375 degrees F., uncovered for 25 minutes or until heated
through.
